Japenase Multi-Purpose Sauce
(Happo Dare)
This very versatile Japanese multi-pourpose sauce is a recipe from Harumi Kurihara. She is one of my favorite Japanese cookbook author. Happo Dare literary means "eight-directions sauce". You make a large batch and save it in the fridge and use it for a marinade for chicken, over a fried fish or blanched vegetables, for a braised pork or a sauce for any kind of stir-fry.
Yield: about 4 cups
Ingredients
- 2 cups soy sauce (Japanese kind like Kikkoman)
- 1 cup sake
- 1 cup mirin
- 2 to 3 tablespoons sugar
Cooking Directions

Mix all together in a sauce pan and bring to boil. Turn off the heat and cool. Put them in a clean jar and keep it in the refrigerator. It last several months.
