Ginger Syrup

Make a bunch of ginger syrup and store it in the refrigerator to make homemade ginger ale in the daytime, and several refreshing cocktails at night.
Yield: about 2 cups
Ingredients
- 1-3/4 cups fresh ginger
- 1-3/4 cups sugar
- 1-3/4 cups water
- lemon zest from 1/2 lemon
Cooking Directions

Peel ginger and dice into small cubes. I recommend using a teaspoon to scrape the skin in order to peel it. It is easy, safe and prevents peeling the ginger too thickly.

Peel zest from one lemon. Do not include the white part of the lemon under the zest.

Put all the ingredients into a sauce pan and bring to a boil. Turn the heat to low and simmer until the liquid reduces to about half (45 - 60min).

Turn off heat, cover and cool.
